What started as a ‘why-not’ after seeing this recipe posted by the lovely Stephanie Bejar in the Huffington Post, has turned into a monthly ritual. In fact, these muffins are the closest thing I have to religion. Suddenly all the bananas I have frozen in my freezer have found their collective purpose. I could go on and on about them, but they really do speak for themselves. And if you require more selling…I’m starting to doubt you really know a good dessert when you see one.
What you’ll need:
- 2 cups of all-purpose flour (preferably organic, of course)
- 1.5 teaspoons of baking soda
- 1/2 teaspoon of salt
- 1 cup of sugar (did you know some sugar isn’t vegan? )
- 1 cup of chocolate chips, or equivalent (I like to buy a bar of Camino dark chocolate [sometimes with coconut!] and smash it up in replacement of chocolate chips)
- 1/3 cup of oil (canola, olive, etc.)
- 4 bananas, mashed (these can be fresh bananas or frozen bananas)
- 1/4 cup of water
- 1 teaspoon of vanilla extract
- a lot of patience, because you’ll want to eat this batter raw, and will know in your heart there would be no risk to your health doing so
How you’ll do it:
- Start by preheating the oven to 350 degress
- In a medium bowl mix flour, baking soda and salt
- In a separate [large] bowl, mix the sugar and oil (note how pretty it looks when mixed), added the mashed banana, then the chocolate chips/bits, water and vanilla extract and mix well
- In little spurts, pour the flour mixture into the sugar mixture and mix well until it has all been added
- Grease or line your muffin trays
- Bake for about 20-25 minutes (this is a tough one to say for certain, given how old and temperamental my oven is, so do keep an eye on them!)
How you’ll eat it:
- while still warm, with a big slab of delicious Earth Balance
- in the morning, with a cup of tea while you write a new recipe entry for your website
- monthly (minimum)
This recipe yields about 16 muffins. They’re great for birthday presents, dinner parties, potlucks, to prove to your Nonna that vegan baking is delicious, etc. If you’re lovingly trying to show the people in your life that being vegan doesn’t mean you’re meals consist of sitting in the woods munching on indigenous tubers, this is your new secret weapon.
